FOOD: Penne Vodka

I don't know if it's that I have a weakness for the Mediterranean diet or if I have been watching too much Jersey Shore, but after 3 straight days of Mexican food I had a craving for some Italiano!
I decided to make Penne Vodka (with my own twist) and it is super easy!

You'll need:
Penne (I prefer whole wheat pasta)
Your favorite marinara or a good base for one.
Ricotta Cheese
Parmesan
1/3 cup vodka
Pancetta (Italian bacon)
couple pads of real butter
Ingredients. The Hunt's sauce is good because it isn't chunky at all. Pancetta is kinda pricey but worth it.

Melt couple pads of butter until foamy.  Add diced up pancetta

Cook in butter until starts to crisp.

Add 1/3 cup vodka, cook until alcohol burns off (couple-few minutes)

Add tomato sauce

Season to taste w/ S&P

Add 3-4 scoops of ricotta cheese

Stir until well blended

I add parmesan and some parsley. Let simmer a little to blend flavors.

Add cooked al dente pasta

Stir it up and serve asap!

I also made fresh garlic bread

dish up and eat!
It was a yummy, easy dinner!  Penne vodka usually calls for heavy cream instead of ricotta but I love the blend of marinara and ricotta so much!  You can make it veggie by not adding the pancetta but it really does give a good flavor.
The garlic bread is just a baguette, EVOO, minced garlic, salt, italian seasoning and mozarella and parmesan.  Broil it for 5 minutes or less and you have fresh toasty bread with an awesome garlic kick!  It doesn't matter though as long as everyone eats it right?!
